Whole30 Day 20

Oh man did I have a day that tested my emotional status with food.  I had my day all planned out perfectly because I knew it was going to be a busy one and everything ended up all messed up.

I had to take both kids and a hurt dog to the vet first thing this morning at 7:45. I'm not sure what happened but one of my dogs had a big puncture wound on her face (I'm guessing it was from one of my other dogs).


While the vet was putting staples in her face...

My four year old was puking in a trash can in the room. My two year old was running wild through the vets office and next door to us they were euthanizing a dog. It was crazy.  I debated putting those pictures up but if you are at all in to animals or science you'll probably like them.  Plus I've already put pictures of my kitties amputated leg.

We had two birthday parties to go today (ahhh that's so mom like!) and we attempted one. Squirrel ended up spending the rest of the day on the couch with a stomach bug. I am praying praying praying that LB and I don't get it.

One great thing about my day is never once did I want crappy food.  That is HUGE y'all.  I'm a stress eater.  Not really an emotional eater.  If I get sad I actually lose my appetite.  But if I'm stressed I'll shove anything and everything in my face.

Here's what I did eat today:

Breakfast:

I took leftovers and added two eggs!  YUM!

Lunch:

I was strapped for time and mental capacity so I just ate more leftovers.  Straight out of the jar!

Dinner:

Oh wait how about some more leftovers!  Ha!  This time I added a grass fed beef hotdog and greens tossed with olive oil and balsamic vinegar.  This was awesome.

Exercise:
I planned on going to the gym today but that didn't happen.

How I feel:
Right now I can barely keep my eyeballs open.  I'm tired both physically and mentally.  Caring for a sick kid is tough.  Especially if you have another kid that's not sick and bouncing off the walls.  I am proud of myself for not turning to food for an emotional crutch.  Serious progress.

Whole30 Day 19

Before we get to the food you've gotta check out this post of these cute little girls making my paleo italian meatballs!

Breakfast:

The last piece of that frittata.  Topped with avocado.

Lunch:

Leftovers from last night!  Plus an unpictured cashew cookie larabar.

Dinner:


Burgers and roasted sweet potatoes!  I topped my burgers with avocado, paleo mayo, and dill relish.  Weird combination but it was good!  The sweet potatoes had coconut butter on them.

Exercise:
An hour of pilates and about 30 minutes of a chest workout.

How I feel:
I felt good all day!  I'm feeling like I don't want to stop this Whole30 thing...

Whole30 Day 18

Breakfast:

Paleo pumpkin porridge.  Topped with sunflower seed butter and salted cinnamon coconut chips.


If you haven't made those salted cinnamon coconut chips you need to.  Yum!

Lunch:

Lunch was to go.  A leftover tuna cake topped with avocado and roasted sweet potatoes.

Dinner:

I cleaned out my fridge tonight for dinner.  I had prechopped carrots, broccoli, kale and mushrooms so I added them to a big pot with some coconut oil.  When they were almost done I added some leftover spaghetti squash and ground pork.


I topped it all with an egg and coconut aminos.  Ahhhhh... It was SO good!  I used up tons of veggies and I have leftovers for tomorrow!

Exercise:
Deadlift x25 (light), burpees x15, assisted pullups x15, lat pull downs x10 (heavy)- 4 rounds.  Plus I walked on the treadmill for 20 minutes.

How I feel:
Perfectly normal.  No weird cravings and no lulls.

Whole30 Day 17

Breakfast:

Two eggs, ground pork, broccoli and kale.  All cooked in ghee.

Lunch:

I was in a hurry so I reheated and ate spaghetti squash and meatballs in a jar.


I also threw some greens in a jar and dressed them with olive oil and balsamic.

Dinner:

A'tuna cake', more greens with balsamic and evoo, and a sweet potato with coconut butter.  I tried to adapt the recipe and make it more my own and I failed.  I'm done trying to make my own tuna cake.  This recipe is awesome.  I do use all almond flour instead of the coconut and I use tuna packed in olive oil.  I read somewhere sometime that it helps the fish hold its omega-3's?  I can't even remember the details but that's what I do.  Plus it's tastier.


I swear eating that is like eating dessert.

Exercise:
Nada.

How I feel:
I had many feelings today of 'I got this!'.  That's a great thing.

Whole30 Day 16

I am thinking of going to the Whole9 Nutrition Workshop in Arlington, VA on June 22nd. Does anyone know anyone that is planning on going? I live in NC and was planning on driving up that Friday night. It would be great to know someone going!

Breakfast:

More frittata.  While this is yummy... Like really yummy I'm looking forward to paleo pancakes.

Gosh I miss them so much.

Lunch:

I cleaned out the fridge with leftovers.  I had one tuna cake, massaged kale with balsamic, and roasted sweet potatoes and carrots with coconut butter.  That's like three containers that are out of my fridge.

Dinner:

More leftovers.  This is much better than eating the same things all the time.  I don't mind the little extra work during the week and I still have leftovers.

Exercise:
I did a strict shoulder workout today at the gym plus twenty minutes or so of cardio on the treadmill.

How I feel:
I feel pretty good today!  I think things are evening out in my body hormonally.  I feel content and happy!  I have been thinking about the end of this and what I'd

Whole30 Day 15- Week Two Check In!

Week TWO:

So week two was much harder than week one.  I had a rough week mentally with the kids so it was much more challenging this week.  I've felt really good the past couple days.  I think things are leveling out because I just feel good.  Which is how I want to feel.  Sure the crazy energy is great but I know that won't hold up forever.  I just want to feel happy with myself and that's how I feel right now.  The only thing I'm fighting are the cravings when I get stressed in the afternoons.  I want to eat and it doesn't matter what it is.  I'm not even sure if those will go away.  I've tried making myself happy in other ways but right now eating is what makes me the happiest.  I haven't given in to those urges.  I'm practicing some tough love on myself in hopes of breaking that cycle.

Breakfast:

I reheated that frittata I made yesterday and topped it with fresh salsa and avocado.  Plus a side of strawberries and blackberries.

Lunch:

Well I'm just adapting everyone's recipes because lunch was an adaptation of this recipe for tuna cakes.  I don't even know what I threw in the bowl but it was amazing.  The cakes held together nicely and really crisped up on the outside.


Plus I had some massaged kale drizzled with balsamic vinegar.

One thing I've learned on my foodie adventure is to get a good balsamic vinegar.  
I'm not talking the $50 bottle on the shelf... I think this was $12 and it was worth every penny.  It's so sweet and tangy.  It's very different from the $3.99 bottle.

I went back for more balsamic!


Dinner:

Italian meatballs with spaghetti squash all cooked in Raos marinara.

Plus simple greens with olive oil, fresh lemon, and more balsamic.


Exercise:
Nothing! I haven't been going crazy with exercise during this Whole30. I've been kind of busy with errands and honestly I guess the gym hasn't been a priority.

How I feel:
This morning started out a little rough emotionally for me but I was fine around lunch time.  These dang kids are sucking the life out of me.  I never once had a craving today or wanted to eat out of stress.  Crazy!

Whole30 Day 14

Normally I know what I've eaten all day.  If I'm missing out on green veggies then I can squeeze them in.  Honestly, I had no idea what I ate today.  Everything was Whole30 but it was so random.  I was trying to get rid of stuff in the fridge and eating things I made for meal prep at the same time.

Breakfast:

Three eggs, peppers, onions, and broccoli cooked in ghee.  Plus coffee with homemade almond milk.


I ended up sharing a lot of it with LB even though I didn't want to.

Lunch:

Salt and vinegar cabbage with two leftover applegate hotdogs.  Topped with mustard.  Strange but really good!

After lunch I started on some minimal meal prep.  I didn't like it but I took everyone's advice and gave up the whole week meal prep thing.  Instead of prepping for the week I just prepped basics and wrote a note of possibilities on the fridge.

First up was meatballs.

I made my own recipe for Italian meatballs just to make sure it was still good.

I forgot how much I love those little guys!

They really are an amazing meatball!

I also made a frittata for breakfast so I don't fall in the rut I was in last week.

Frittatas are easy.  I got the idea from Everyday Paleo but have kind of made it my own.  I just brown up some meat with peppers, onions, and grated sweet potato.  I sprinkle everything with taco seasoning.

Then I pour 6 scrambled eggs over the top.


Bake covered at 350 until it sets and then uncovered until it gets a little brown on top.

So good and it reheats great!

I also:

• Made sure all veggies were cleaned, chopped, peeled and ready to go
• All fruit was washed
• Made massaged kale

Dinner:

RANDOM!  See!  I wasn't overly hungry because I ate three of those meatballs I made off the baking sheet.  Ridiculous I know.  I put some of the beef I used for the frittata aside for dinner.  I have an endless supply of salt and vinegar cabbage so I reheated that plus the beef and topped it with fresh salsa and avocado.  Plus roasted carrots and sweet potato with coconut butter.  Whew.


Exercise:
Nothing!

How I feel:
I felt amazing today!  Not endless crazy energy, not tired, not blah, not overly happy... I just felt like me which is exactly how I want to feel.  I felt content if that describes it better.

Whole30 Day 13

Breakfast:

Paleo pumpkin porridge from Paleo Jess.  Topped with sunflower seed butter and salted cinnamon coconut chips.  I think I may have had sex with my pants on this morning... If not then it was real close.

Here's the deal.  I know this was pretty much a paleo pancake all smashed up and it may look like I was trying to recreate oatmeal.  SWYPO means you try to recreate something unhealthy using paleo ingredients... Something that you really love.  It violates the emotional side of the whole30.  I hate oatmeal.  So I don't think I broke a rule.

Lunch:

A leftover local grass fed beef burger topped with avocado, homemade mayo, mustard, and relish.  Plus salt and vinegar cabbage and a leftover hardboiled egg.

Do you know that it was a little tricky finding relish and mustard that was whole30?  Even condiments have so much crap in them.

Dinner:

My parents grilled out so I brought some more of that grass fed beef.  Plus a couple Applegate organic hotdogs and roasted sweet potatoes.

I'm stuck on repeat... but I like it.

Exercise:
An hour of body combat. I was at the gym at 7:45 this morning with both kids... Where were you?! #noexcuses

How I feel:
I felt good today.  I felt a little tired this afternoon but it didn't last long.

Whole30 Day 12

First of all, thank you guys for your kind words yesterday.  I get an alert on my phone every time someone comments on here and so your comments made me feel better all afternoon.  That's one of the reasons I blog- great support group with amazing blogger friends.

Second of all, I took everyone's advice the other day about meal planning.  My meal planning changed drastically.  Actually, you might not see much meal prep on here...  I'll explain more later.  Another reason why I blog- advice and accountability from those amazing blogger friends.

Third of all, I checked in with my list of whole30 bloggers today.  You guys are amazing.  Need another reason why I blog?- inspiration from those amazing blogger friends!

Breakfast:

Beef, broccoli, bok choy, and carrots.  Topped with sunshine sauce.

Lunch:

Leftover paleOMG glazed blackberry pork chops with cauliflower rice.


I was hungry this afternoon so I made a snack of one hardboiled egg and a little bit of avocado mashed together.

Dinner:

I love burgers.  I topped these with homemade paleo mayo, avocado, mustard, and relish.  All whole30 approved.  Plus a side of salt and vinegar cabbage.

Tonight was pizza, popcorn, and a movie night for us.  Last Friday I felt pretty left out so this Friday I was prepared.  
I ate a little snack with the kids.  Defrosted berries nuked in the microwave for about 30 seconds.  Topped with sliced almonds and homemade almond milk.  I didn't even want the popcorn!

Exercise:
Does pushing a grocery cart count?  That's what I did instead of going to the gym.

How I feel:
I scrambled out of bed this morning at 5:30.  I have been setting my alarm for 5:30 instead of 6 so I have more alone time.  The little birds wake up at 7 so I have from 5:30-7 to shower and then do whatever I want.  I'm not sure if it's the whole30 or the fact that I get time by myself with coffee that jolts me out of bed.  Either way I love it.

I hit a little low this afternoon.  I felt just blah.  Blah with this whole30 thing, blah with the way my body looks, blah.... Has anyone else had that?

Whole30 Day 11

Can I just complain for a minute?  My husband isn't here and I just need to vent.  My child is driving me crazy.  My stomach feels off.  Not nauseous... maybe unsettled is the best word?  So maybe he's feeling the same way.  Maybe we are fighting off a stomach bug?

I got to the point today where sanity was being lost.  I almost lost my sanity.  We've had one of those days.  One of those days where he won't take no for an answer.  One of those days where there is a tantrum thrown about every hour.  One of those days where all he wants to do is be held.


I know there are people out there that would give anything to hold a child all day long.  I know I should be grateful for my children.  I know this... but I've had a long day.

Thank you for listening to me vent.  I feel better.

Breakfast:
One good thing about being pushed to my max today is that it challenged my emotional food status.  I had a rough day with LB and my stomach is funky.  I still stayed true to the whole30.

For breakfast I tried the paleo pumpkin porridge from Paleo Jess.

I really don't like oatmeal.  Like I just won't even eat it.  Not even a bite.  I literally licked my bowl clean this morning.  It was so good!  I did exactly what she said to do and topped it with a scoop of sunflower seed butter and coconut.



Lunch:

I noticed last night after dinner that my stomach didn't feel quite right.  We have friends that are just getting over a stomach bug so I'm praying that isn't it.  When lunch time came around I wasn't that hungry and nothing sounded good.  I roasted a whole sweet potato and topped it with coconut butter.  I ended up not finishing all of it and put half in the fridge for later.  Blah.


Dinner:

Did you see what I got in the mail the other day on instagram?  I've been waiting for this thing!


I'm in love with Juli Bauer.  She's hilarious and makes awesome recipes.  I had pork chops defrosted so for dinner tonight I made the pork chops with blackberry sauce.

These were great!  I made a simple cauliflower rice and those leftover sweet potatoes.

Exercise:
I did go to the gym today.  I did some back stuff and 20 minutes of cardio.

How I feel:
Whole30 wise I feel great.  I noticed my skin is clearing up and brightening.  I had three people tell me yesterday that I looked great.  I'm not sure what's going on with my stomach.  I can't afford to have a stomach bug... Not with a cranky toddler!
